The lack of information and communication regarding the role of diet in the control and prevention of cancer can create confusion among individuals at high risk of cancer and at risk for cancer recurrence. The objectives of research in our laboratory are to examine and establish dietary intake levels in animal models and human clinical studies for cancer control and prevention.
The summer fellow will participate in (1) compilation and analysis of data collected from dietary intervention studies with rice bran or beans in animal models and for evaluation of anti-tumor immunity; (2) development of educational materials on cancer fighting properties of rice bran and beans; and (3) review of the literature and manuscript writing.
