Student overcomes challenges to graduate

Lampkin set to start career

DENVER - Kate Lampkin is graduating from the University of Colorado Denver on May 12 with a bachelor's degree in Anthropology.

This student's story involves some 'twists and turns.' She was forced to drop out of college in 2004 because of financial issues, and then she enrolled again in 2009. During those five years, she also became very ill with a gallbladder issue.

Lampkin worked her way back and maintained a 4.0 GPA while also holding down a full-time job. Eventually, doctors diagnosed her as having Celiac Disease, which is an autoimmune disease, and would have to become completely gluten-free.

After learning about her gluten intolerance she tried to find better food options and became familiar with Udi's Gluten-Free Foods. She then contacted Udi's to ask if they would consider opening a café on the Auraria Campus. Her inquiry prompted Udi's to offer her an internship.

After graduation, Udi's will make her a full-time employee as a recruitment specialist responsible for hiring interns from colleges all over the country.

She initially chose to attend the University of Colorado Denver because it is close to home, but she also wanted the prestige of the name of University of Colorado.

Her favorite part about campus is that there are three colleges located here (CU Denver, Metropolitan State College of Denver and Community College of Denver)."There are always interesting people and interesting things happening because of that," said Lampkin.

The amount of one-on-one time in the anthropology department also surprised Lampkin. Especially, the work she was able to do with Professor Julien Riel-Salvatore and Justin Bain in the Writing Center.

Overall, Lampkin said she's "really enjoyed her time at the University of Colorado Denver and is very excited about the future and the opportunities" she gained from her time here.

Denver Campus commencement is May 12 on the Auraria Field.
